Target Information
Chicken ovalbumin is the major protein in the white of the egg and a common antigen in immunological research. Egg white contains various proteins including ovalbumin, conalbumin, ovomucoid, and lysozyme. Ovalbumin belongs to the serpin family (Ov serpin subfamily) and can cause allergic reactions in humans. It is implicated in eggshell development and is localized in the mammillary bodies of decalcified shell, suggesting a role in the initial phase of shell formation. However, its specific function in shell mineralization remains unclear.
