Target Information
The genus Salmonella is a member of the family Enterobacteriaceae, composed of Gram-negative, facultative, and motile bacilli. Salmonellae possess three major antigens:
- H antigen (flagellar) – phase 1 & 2
- O antigen (somatic) – part of the LPS moiety
- Vi antigen (capsular) – referred to as K in other Enterobacteriaceae
They also contain LPS endotoxin typical of Gram-negative bacteria, composed of an O polysaccharide, R core, and inner Lipid A. Endotoxins can induce fever and activate complement, kinin, and clotting factors.
The most common serotype associated with foodborne infections in humans is Salmonella enteritidis, particularly phage type 4 (PT4). This strain is frequently found in the intestinal tracts of livestock, poultry, dogs, cats, and other warm-blooded animals, and is often linked to poultry and eggs.
