Egg M Medium ( Formerly Egg Meat Medium) is used for determination of proteolytic activity and carrying stock cultures of anaerobic microorganims. Beef muscle serves as sources of carbon, nitrogen, salts, vitamins and other nutrients required to support bacterial growth. Egg white serves a source of protein for the determination of proteolytic activity. Calcium carbonate helps to neutralize the acids and also helps in creating anaerobic atmosphere by displacing the oxygen in the medium.
