Target Information
Amylase is an enzyme that catalyzes the breakdown of starch into sugars. It is present in human saliva, initiating the chemical process of digestion. By in situ hybridization combined with high-resolution cytogenetics, the amylase gene is mapped to chromosome 1p21. Amylase enzymes are used in bread making and to convert complex sugars such as starch into simple sugars, which yeast then ferments into alcohol and CO₂.
