Target Information
Amylase is an enzyme that catalyzes the breakdown of starch into sugars. It is present in human saliva, where it begins the digestion process. The amylase gene is mapped to chromosome 1p21. Amylase enzymes are used in bread making and in converting complex sugars such as starch into simple sugars, which are then fermented by yeast to produce alcohol and CO₂.
