Target Information
Chicken ovalbumin is the major protein in the white of the egg and is a widely used antigen in immunological research. Egg white contains various proteins including ovalbumin, conalbumin, ovomucoid, and lysozyme. Ovalbumin belongs to the serpin family and the Ov serpin subfamily. It can cause allergic reactions in humans and is implicated in eggshell development. Immunohistochemistry studies indicate that ovalbumin is localized in the mammillary bodies of decalcified shell, suggesting its involvement during the initial phase of shell formation, though its exact role in shell mineralization remains unclear.
