TAS2R7는 G-단백질 결합 수용체 초과가족에 속하는 미각 수용체 후보군의 구성원입니다. 이 단백질들은 혀와 입천장 상피의 미각 수용체 세포에서 특이적으로 발현되며, 유전체상에서 클러스터를 이루어 쓴맛 인식에 영향을 미치는 유전적 위치와 연관되어 있습니다. 기능적 발현 연구에서 쓴맛 자극에 반응하며, 인간 염색체 12p13의 미각 수용체 유전자 클러스터에 위치합니다. Gustducin 결합 수용체로서 구강 및 위장관 내 쓴맛 화합물 인식에 관여하며, PLCB2 및 TRPM5 경로를 통해 신호를 전달합니다. 혀와 입천장 상피의 일부 미각 수용체 세포에서 발현되며, gustducin 양성 세포에만 존재합니다.
