Avidin is a glycoprotein found in egg white and tissues of birds, reptiles, and amphibians. It consists of four identical subunits with a combined mass of 67,000–68,000 daltons.
Deglycosylation of avidin yields NeutrAvidin Protein with a mass of approximately 60,000 daltons. This modification reduces carbohydrate-based lectin binding to undetectable levels while retaining biotin-binding affinity.
NeutrAvidin Protein features a neutral pI that minimizes nonspecific adsorption and preserves lysine residues for derivatization or customized conjugation. Among known biotin-binding proteins, NeutrAvidin provides the lowest nonspecific binding.
Specific activity for biotin binding is approximately 14 µg/mg of protein, close to the theoretical maximum.
