TAS2R38은 쓴맛 인지에 관여하는 수용체로, gustducin과 연관되어 있습니다. 이 수용체는 위장관 내용물의 화학적 조성을 감지하는 데 역할을 할 수 있으며, alpha gustducin을 자극하여 PLC-beta-2 활성화를 매개하고 TRPM5 개방을 유도할 수 있습니다.
혀의 미각 수용세포 중 gustducin-양성 세포에서만 발현됩니다. TAS2R38의 변이는 phenylthiocarbamide (PTC) 맛 인지 능력과 관련이 있으며, 이는 유전적으로 조절되는 특성입니다. 일부 사람과 침팬지는 PTC를 매우 쓴맛으로 느끼지만, 다른 사람은 무미로 인지합니다. 인간 내에서도 미각 민감도에는 상당한 변이가 존재합니다. TAS2R38 유전자의 세 개의 코딩 SNP에서 유래한 다섯 가지 하플로타입이 PTC 맛 감지의 다양한 표현형과 관련되어 있습니다.
