Target Information
Casein is a family of related phosphoproteins commonly found in mammalian milk. It constitutes approximately 80% of the proteins in cow milk and 20–45% in human milk. Casein serves as a major component of cheese, a food additive, and a binder for safety matches. It provides amino acids, carbohydrates, calcium, and phosphorus. Bovine casein is a phosphoprotein composed of four main types, accounting for about 80% of total protein in bovine milk.
