Target Information
Pepsin is one of the main proteolytic enzymes secreted by the gastric mucosa. It consists of a single polypeptide chain derived from its precursor, pepsinogen, by removal of a 41 amino acid segment from the N-terminus. Pepsinogen is synthesized in the stomach lining, and hydrochloric acid is required to convert it into the active enzyme and maintain the optimal pH (1–3) for pepsin activity. Pepsin effectively cleaves peptide bonds involving aromatic amino acids and exhibits broad substrate specificity. Pepsin C differs from pepsinogen and pepsin in its amino acid composition, particularly in basic amino acids, glutamic acid, aspartic acid, leucine, and isoleucine content.
