Target Information
Amylase is an enzyme that catalyzes the breakdown of starch into sugars. It is present in human saliva, where it initiates the chemical process of digestion. The amylase gene is mapped to chromosome 1p21. Amylase enzymes are utilized in bread making and in the conversion of starch into simple sugars, which yeast then ferments into alcohol and CO₂.
