Target Information
Chicken ovalbumin is the major protein in the white of the egg and a common antigen in immunological research. Egg white contains various proteins including ovalbumin, conalbumin, ovomucoid, and lysozyme. It belongs to the serpin family and the Ov serpin subfamily. Ovalbumin can cause allergic reactions in humans and is implicated in eggshell development.
Immunohistochemistry studies show ovalbumin is localized to the mammillary bodies of the decalcified shell, suggesting it participates in early shell formation and is incorporated into the protein matrix. Its specific role in shell mineralization remains unclear.
