Amylase is an enzyme that catalyzes the breakdown of starch into sugars. It is present in human saliva, initiating the chemical digestion process. The amylase gene is mapped to chromosome 1p21. Amylase enzymes are used in bread making to convert starch into simple sugars, which yeast then ferments into alcohol and CO₂.
