LPGAT1는 lysophosphatidylglycerol (LPG) 특이 acyltransferase로, 다양한 acyl-CoA와 LPG를 기질로 인식하지만 long chain saturated fatty acyl-CoA 및 oleoyl-CoA를 선호합니다. Oleoyl-LPG를 palmitoyl-LPG보다, oleoyl-CoA를 lauroyl-CoA보다 선호합니다.
