TAS1R1은 미각 수용체로, TAS1R3와 함께 우마미(감칠맛) 자극 및 대부분의 L-아미노산에 반응합니다. D-에난티오머나 다른 화합물에는 반응하지 않으며, 종 내외의 서열 차이는 미각 반응의 선택성과 특이성에 영향을 미칩니다. 주로 혀의 유두(fungiform papillae)에 강하게 발현됩니다.
