BTN1A1 (Butyrophilin) is the major protein associated with fat droplets in milk. It belongs to the immunoglobulin superfamily and may function as a cell surface receptor.
The human butyrophilin gene is located in the major histocompatibility complex (MHC) class I region on chromosome 6p and is thought to have arisen relatively recently through exon shuffling between two ancestral gene families.
