TAS2R38은 쓴맛 인식에 관여하는 수용체로, gustducin과 연관되어 있습니다. 위장관 내 화학적 조성 감지에 역할을 할 수 있습니다. 이 수용체의 활성은 α-gustducin을 자극하여 PLC-β2 활성화를 매개하고 TRPM5 채널 개방을 유도할 수 있습니다. 혀의 미각 수용 세포 중 gustducin 양성 세포에 발현됩니다.
TAS2R38의 변이는 phenylthiocarbamide(PTC)와 관련된 쓴맛 인식 능력과 연관되어 있으며, 유전적으로 조절됩니다. 일부 사람(및 침팬지)은 PTC를 매우 쓴맛으로 느끼는 반면, 일부는 무미로 느낍니다. 인간 내에서도 미각 민감도에 상당한 변이가 존재합니다. 세 개의 코딩 SNP에서 유래한 다섯 가지 하플로타입이 PTC 미각 민감도의 다양한 표현형과 관련되어 있습니다.
