Target Information
Amylase is an enzyme that catalyzes the breakdown of starch into sugars. It is present in human saliva, initiating the chemical process of digestion. The amylase gene is mapped to chromosome 1p21. Amylase enzymes are used in bread making and in the conversion of starch into simple sugars, which are then metabolized by yeast to produce alcohol and CO₂.
