Target Information

Amylase is an enzyme that catalyzes the breakdown of starch into sugars. It is present in human saliva, where it begins the process of digestion. The amylase gene is mapped to chromosome 1p21. Amylase enzymes are used in bread making and in the conversion of complex sugars such as starch into simple sugars, which yeast then metabolizes to produce alcohol and CO₂.
