TAS1R1은 감칠맛(umami) 자극에 반응하는 미각 수용체로, TAS1R3와 함께 대부분의 20가지 L-아미노산에 반응하지만 D-에난티오머나 기타 화합물에는 반응하지 않습니다. 종 간 서열 차이는 선택성과 특이성에 영향을 미칠 수 있습니다. 주로 혀의 유두(fungiform papillae)에 강하게 발현됩니다.
